On Friday 18 July, from 7.30 pm, the Duca D'Aosta restaurant is dedicating a special evening to the memory of Paolo Zuliani, celebrating his passion for good food, wine and music through an engaging gastronomic experience.
A tasting menu has been created for the occasion, featuring Paolo's favourite flavours, with refined dishes accompanied by a selection of excellent wines, chosen together with local producers.
Menu for the evening
Starter
Carpaccio of yellowfin tuna marinated and smoked over beech wood, served with rocket, Tropea red onion mostarda, capers and wheat chips.
Wine pairing: Ribolla Gialla 2024 – Villa Vasi (Collio Goriziano)
First course
Octopus drunken in dark beer, with creamy mussels and cannellini beans.
Wine pairing: Friulano 2024 – Toros (Collio Goriziano)
Second course
Fresh egg tagliatelle with a trio of prawns simmered in brandy, creamed with white truffle cream and fresh truffle shavings.
Wine pairing: Chardonnay 2023 – Vie di Romans (Isonzo)
Third course
Grilled squid on a bed of caponata vegetables and crispy pancetta.
Wine pairing: Terre Alte 2021 – Livio Felluga (Rosazzo)
Dessert
Gin and tonic sorbet made with Tanqueray gin, served with a spoon.
To accompany the evening, maestro Carlo Urizio will perform live piano pieces in an intimate and cosy atmosphere.
The producers of the featured wineries will also be present, together with Manuela Di Bert, Alessio Zuliani and the entire restaurant staff. The service will be provided by sommelier Alojz Felix Jermann.
